Elicer Diaz Diaz is a coffee producer from el Progreso, la Coipa. Elicer Diaz Diaz owns 3 hectares of land in the El Paraiso village in Huabal district. Elicer has two hectares of Caturra and one of Catimor, which he picks and processes separately. The altitude at the farm is 1900 to 2000 masl which contributes to the exceptional cup quality. Once picked, cherries are washed in clean water from the spring in the farm and then carefully inspected before being placed on African-style raised beds for around 35 to 40 days depending on the ambient temperature. Elicer has a strict protocol where each table is tend by the same person during the day and turned at regular intervals of 45 minutes to ensure even drying.
